My Menu Plan

The week ahead is a busy one for our family and I am realizing more and more how important it is to take care of ourselves during times like these. We have let a lot of our basic principles fall by the wayside over the past few months with the holidays and all – there was too much sugar, too much wine, not enough exercise, not enough down time and far too much stress. This week, I want to try to embrace the craziness of our schedule with a clear head so that means trying out some new, healthy twists in our menu plan, making time to work out (even when there isn’t any), and trying to stay focused and grateful. I stole my dad’s new copy of Giada’s Feel Good Food cookbook and spent my entire Friday night reading through it and marking recipe after recipe. It is SO good, you must pick it up if you are at all interested in a lighter, healthier approach to your own personal menu plan (because you obviously have one by now, right?!?). Here’s a look at our meals for the week:

Sunday – my parents are coming over and bringing dinner. Starting the week off on a more stress-free foot. I may whip up a salad.

Monday – BBQ chicken with cauliflower mac and cheese. This is from the new issue of Food Network Mag and I love the addition of cauliflower. My kids have definitely not been getting enough vegetables lately and I have realized it’s time to start sneaking some in.

Tuesday – Taco Tuesday. I need to keep some things simple this week.

Wednesday – Kids are going to do make-your-own pizzas with whole wheat pitas, pizza sauce and cheese (PS – it sort of kills me to say this, but I read about how the pre-shredded stuff is really not good for you, so it’s best to buy a brick and shred it yourself. Sigh. Being good is so annoying sometimes, isn’t it??). I am hosting a little GNI (girls’ night in) with some friends that night so our menu will include some good cheese, some homemade pita chips, dips, crudité, charcuterie and the like.

Thursday – Dinner: A Love Story pork chops with roasted red potatoes and a green salad. May have to invite my parents over to pay them back for Sunday.

Friday – take out. We’ve earned it.

Bonus meals – Giada’s chia seed pudding (pictured above) for breakfast. I have heard very good things. Am also going to make her brown and wild rice with brussels sprouts salad for lunch. It looks like it’s packed with flavor and energy. And I am going to need a little bit of both this week.

Sweet treat of the week – some friends brought me some gorgeous lemons from their tree (one of the best things about living in Southern California though my tree isn’t doing so well, sadly) so I have this lemon rosemary yogurt cake on my Sunday baking list. Will let you know if you should add to your list.

    Wait, what’s wrong with the pre-shredded cheese?! Please share! I use that stuff several times a week for quesadillas, make-your-own pizzas, etc, etc. ACK.
