So let’s dine well, shall we? Here’s a look at our plan for the week (I had a whole extra hour to work on it this morning – thank you, Daylight Savings!):

Sunday – my parents are going to come over for a BBQ. Ribs are on the menu and I like this recipe from Sweet Paul. I am also going to whip up this insanely simple (and insanely delicious) dip that a neighbor brought to the Halloween block party last week. Sometimes suburbia offers up some great little gems. My dad is going to make his famous tomato and feta salad. And we’ll probably have Halloween candy for dessert.

Monday – brown butter tomato sauce served with fresh cheese ravioli. I meant to make this a few weeks ago and it fell off the menu somehow, so this time I am committed.

Tuesday – tilapia fish tacos. We keep it simple – fish cooked in Trader Joe’s green salsa, some corn tortillas, pico de gallo, lots of lime, a slice of avocado, cilantro and maybe a pinch of shredded cheese. It’s really quite perfect.

Wednesday – this roast chicken. Apparently I can’t get enough of pinning roast chicken recipes. I am probably going to prep it on Tuesday evening because I am in LA for meetings on Wednesday and it can just go straight into the oven while I am gone. That right there is why I love roast chickens. Cooked with potatoes and served with a simple green salad with lemon vinaigrette.

Thursday – homemade burgers with sweet potato fries.

Friday – takeout. Wine.

Saturday – slow cooker honey garlic chicken. Blackberry jam. Who knew? Served with brown rice and green onions for garnish and color.

Sweet treat – I don’t know if I am going to bake for my kids this week. We have enough sugar in the house to last us until they are ten. But if I did, I would probably make these. Who am I kidding? I will probably make them anyways.

      Thanks for stopping by, Meghan! The dip was DELISH! I do think I may cook it even a little longer next time…but I had a lot happening in my oven at the time so I am sure the heat distribution was off. Happy to have found you!

    I’ve made the slow cooker honey garlic chicken and it is deeeelicious! Great served over brown rice, or even between bread, pulled pork style.
