My Menu Plan
Happy Sunday, friends. Hope you are enjoying your evening – it’s a particularly good one around these parts because tomorrow is the start of a three-day week…the very best kind. Here is a look at our menu plan for the week, for those of you who may need a little inspiration beyond the BBQ (though there is some of that, too – ’tis the season):
Sunday night – homemade burgers with Trader Joe’s garlic fries
Monday lunch – crockpot chicken tacos (I have had a can of Rotel in the pantry forEVER and it’s about time I find something to do with it)
Monday dinner – steaks, homemade sweet potato fries and broccolini
Tuesday lunch – brown rice pasta with homemade tomato sauce with chicken sausage (first time I am attempting this at lunch, hopefully it’s a slow work day)
Tuesday dinner – Tilapia Taco Tuesday
Wednesday lunch – gluten free bread topped with roasted cherry tomatoes and ricotta (inspired by this, but a little less complicated)
Wednesday dinner – rosemary and garlic roasted salmon (pictured above – more GORGEOUS images and the recipe are here) with brown rice and grilled pineapple
Thursday lunch – it’s the 4th! We’ll (hopefully) be at the beach eating In N Out, if all is right with the world
Thursday dinner – 4th of July BBQ at home: probably ribs, chicken, my favorite summer salad and Gwyneth Paltrow’s garlic toast (grilled bread rubbed with garlic and drizzled with olive oil and sea salt)
Friday lunch – out and about, enjoying the holiday
Friday dinner – 5th of July BBQ at my mom’s: Romanian mititei (beef sausages), Greek salad, orzo salad and plenty of wine.

um, hello, thanks! i just told h this morning that i needed to pick up some fish to supplement our leftovers tonight. with our greek/romanian relatives staying with us, we need to make sure we have enough fooooooood! done and done.
meaning, of course, which i didn’t mention in my lunch-not-eaten-yet-addled brain, the salmon recipe is dead on! i have fresh rosemary, and i have garlic. TJ’s salmon, here i come!
