I have decided to give my “Making My Monday” columns a little break. The truth is, though I loved the idea of looking at the week ahead with an optimistic eye, it was becoming a struggle to come up with interesting things to highlight each week and if a blog post becomes a struggle, then it shouldn’t be a post…in my humble opinion. So here is my weekly menu plan instead, because I am not at all struggling to think about food lately 😉

Sunday dinner – Dinner: A Love Story meatballs served over spaghetti squash (last time I made these I tried to go light by using ground turkey and easy parmesan and they weren’t good – followed the recipe to a tee last night and they were much better)

Monday lunch – And will be even better for leftovers at lunch today

Monday dinner – Barefoot Contessa’s crispy mustard chicken served with asparagus and roasted rosemary potatoes

Tuesday lunch – my favorite summer salad with some BBQ chicken, featuring the amazing sauce I brought home from Austin

Tuesday dinner Taco Tuesday

Wednesday lunch – leftover tacos

Wednesday dinner – broiled salmon with sautéed broccolini and brown rice, turned up a little bit with the addition of grilled pineapple

Thursday lunch – I am out and about for meetings, so it’s a frozen Trader Joe’s meal for my man

Thursday dinner – I am tired from a day of meetings, so it’s takeout

Friday lunch – sushi

Friday dinner – our first attempt at homemade gluten-free pizza – wish us luck.
