My Menu Plan

Happy Sunday, friends. Hope you are all enjoying a little R&R this morning, we have been. Here is a look at my menu plan for the week, with a new addition: a few of you have emailed me asking about how my kids factor into our weekly menu and the reality is, some nights they eat what we eat and some nights they don’t. So moving forward, I will put that info in my notes so you can see how I plan for all four of us. Hope it’s helpful!

Sunday dinner – steak, parmesan roasted potatoes from What’s Gaby Cooking and sauteed broccolini (Kai will eat this, Little D will sub out the broccolini for green beans)

Monday lunch – sandwiches

Monday dinner – Mediterranean chicken with couscous (a new recipe for me – I will skip the olives because skater hubs doesn’t like them and use breasts instead of thighs; kids will (hopefully) eat it)

Tuesday lunch – leftover chicken

Tuesday dinner – Taco Tuesday, but we are going to switch up our usual ground turkey for tilapia this week (Kai will eat it, Little D probably won’t so we will sub hers with Trader Joe’s frozen mini chicken tacos)

Wednesday lunch – something frozen from Trader Joe’s, we are LOVING the new chicken curry medallions

Wednesday dinner – Homemade burgers with sweet potato fries (kids eat this but Little D – clearly my picky eater – doesn’t like fries, so she subs out with carrots or green beans)

Thursday lunch – naan bread pizzas – Trader Joe’s frozen garlic naan bread topped with prosciutto, arugula, fresh parmesan, s&p and a drizzle of olive oil

Thursday dinner – pesto pasta with chicken sausage and roasted brussel sprouts (kids will eat it, Little D will pick out the brussel sprouts)

Friday lunch – leftover pasta

Friday dinner – takeout (we’ve earned it by this point)

For those of you following along, we loved all the new things we tried in last week’s menu, especially these BLTs with slow roasted tomatoes for lunch. Note to self, though: roasting tomatoes can take a minute (her recipe said four hours but mine did it in two) so plan ahead…ahem, like I didn’t, so we ended up having them on Friday instead of Tuesday.

      I know, right?!? Clearly she doesn’t take after mom in that regard… 😉
