My Menu Plan
Last week was so chaotic with all the time I spent in LA for work, I am so looking forward to the (semi) normal days ahead. Here is a peek at our menu plan for the week:
Sunday dinner – Ina Garten’s penne alla vodka
Monday lunch – Leftover penne
Monday dinner – Double crunch honey garlic chicken breasts with sauteed broccolini (my new recipe for the week, have had it pinned forever)
Tuesday lunch – BLTs with slow roasted tomatoes (another first)
Tuesday dinner – Taco Tuesday
Wednesday lunch – Leftover tacos
Wednesday dinner – Broiled salmon with edamame and rice
Thursday lunch – I am in LA for meetings, skater hubs will have something frozen from Trader Joe’s
Thursday dinner – Chicken fajitas (we keep it simple: chicken, peppers, onions, cheese, fajita seasoning, avocado and a flour tortilla)
Friday lunch – Takeout
Friday dinner – Homemade pizza (we use Trader Joe’s wheat crust and pizza sauce and our toppings of choice are pepperoni, onion, jalapeno, tomato, pineapple and easy cheese; and I think it’s pretty amazing that I have found someone in life who agrees with me on pizza toppings so we never have to do the half/half business)
By the way, we found two winners in last week’s plan: the Summer corn, bacon and potato WW chowder was super easy and tasty and Ina’s steak recipe was amazing…though we did cut the recommended salt in half. I am starting to do that with all her recipes.
