My Menu Plan
This week is a bit chaotic for our little crew because I am up in Los Angeles and back three times for business. But I still did a plan because it was my one attempt at control in the upcoming five days of crazy. Here’s what it looks like:
Sunday lunch – Summer corn, bacon and potato chowder from Weight Watchers. I pinned this last week and bought all the ingredients and am only getting around to it now. I am not on Weight Watchers (though I am seriously contemplating hopping back on, I think it’s great) but this looks yum whether you are counting points or not.
Sunday dinner – Ina Garten’s steakhouse style steaks (I have been drooling over these since I saw them on a recent episode of the show) and A Cup of Jo’s panzanella salad (pictured above – this was my absolute go-to summer salad last year and since today’s blue skies and time change are hinting at the summer months on the horizon, I am in the mood for it all over again).
Monday lunch – leftover meatloaves from A Smitten Kitchen. I made these the other night and have to say I enjoyed them more than the Ina meatloaf I made a few weeks back. But note to self: this is definitely a weekend recipe.
Monday dinner – Gwyneth Paltrow’s chicken milanese. I told you this was a staple around here.
Tuesday lunch – Trader Joe’s chicken curry over jasmine rice
Tuesday dinner – I will be in Los Angeles enjoying dinner with some girlfriends before an early Wednesday morning call time; back home, it will be Taco Tuesday, of course.
Wednesday lunch – Leftover tacos for my man
Wednesday dinner – Homemade burgers and sweet potato fries (I buy the frozen ones at Trader Joe’s and amp them up with this mix of spices).
Thursday lunch – I will be back in Los Angeles so takeout all around
Thursday dinner – I am still in Los Angeles working an event, so frozen pizza for my man (nothing but the best…)
Friday lunch – Still in Los Angeles. Probably contemplating moving back right about now. Frozen orange chicken for my man.
Friday dinner – Finally home. Busy week finally over. I will not be cooking a thing. There will likely be takeout and there will definitely be wine.

i’ve been making ribs in the crockpot lately… it’s been a rad addition to the weekly menu because i can make as much extra as we want and it rules just as much left over! oh, and it’s easy as hell and everyone loves it.

sounds like a perfect it’s-almost-spring-isn’t-it-really menu! i had plans for a glorious week o’ food (and smoothies – going on the clean program), but they’ve been derailed by a stomach bug. boo. and yes! to WW! it really is the best – combine that with your TDM? you’ll rock that bikini in no time!
