Housewife 101: Brownies from Food Network Mag

A few weeks back, I found this recipe for “chewy chocolate chip cookies” in Food Network Magazine (more on them in a later post).

They were anything but chewy. They were cakey and somewhat dry and I actually ended up throwing out half the batch because even Little D wasn’t into them.

Housewife 101 fail.

So when this past Sunday came along and I was in the mood to bake (slash eat) once again, I hesitated to reach for the magazine…but that damn chocolate issue from a few months back refuses to quit me.

This time, it was brownies from their special “50 Brownies” insert. “Fudgy” brownies, to be precise.

And much to my sheer delight, they turned out fudgy. And rich. And moist. And absolutely delicious.

And best of all? They were easy, instantly qualifying them for a Housewife 101 post.

So here is how you make them:

Preheat oven to 325 degrees and prep a 9″ x 13″ pan. They recommended cooking spray, then aluminum foil, then more cooking spray. Who am I to argue? It worked like a charm.

Melt two cups semisweet chocolate chips (I used Ghirardelli and Guittard combined) and one stick of butter in a saucepan over low heat, stirring. I was surprised at how easy this was, have to say. It melted smoothly into beautiful, liquid chocolate gold.

Off the heat, whisk in 3/4 cup each light brown sugar and granulated sugar; cool slightly.

This, of course, stressed me out a bit. I had a brand new saucepan and the idea of taking a whisk to it made me nervous. And cool slightly? What does that MEAN?!? But alas, both steps were easy as pie. I mean, brownies.

Whisk in four eggs, one at a time, and a teaspoon of vanilla.

Stir in one cup of flour and 1/2 teaspoon of salt.

Spread in the pan; bake 45 minutes. (45 minutes was just perfect.)

Instant brownie nirvana.

And yes, Little D was into them…
