It has been a minute since I’ve shared our menu plan here but it has been happening. Sporadically in a “hey, it’s summertime” sort of way, but happening nonetheless.

So here is what we have planned for the week (minus lunches, because I have just become flat-out lazy about those and we do Chipotle like three times per week):

Sunday – we are headed out for a lovely oceanfront dinner to celebrate my brother-in-law who is in town for like 36 hours from Malaysia and his completed Master’s Degree. Drinks will be had!

Monday – Barefoot Contessa’s penne alla vodka. I talked a while back about planning your dishes around the weather and while this rich, creamy dish doesn’t exactly scream swimsuit season, it is supposed to be a little overcast tomorrow so I used it as an excuse to slot it in (note to working mamas: I realize this recipe takes a lot of time and I realize you don’t have it on a Monday evening, so whip it up next Sunday. The leftovers are even better the next day).

Tuesday – BBQ chicken (we are still obsessed with theย Salt Lick BBQ sauce I hauled home from Austin but are also excited to try Trader Joe’s new Carolina Gold sauce), Bobby Flay’s Greek potatoes with lemon vinaigrette and green salad. I am really excited that I have finally nailed homemade vinaigrette for a simple green salad – three parts olive oil to one part balsamic, a squeeze or two of honey, a teaspoon or so of dijon and salt and pepper – it took me A LOT of attempts to figure this out, no idea why.

Wednesday – BBQ chicken sausages with my favorite summer salad and THIS cornbread. If you’ve been to Bandera, you know how sacred this cornbread is – and why. Hopefully I do it some sort of justice.

Thursday – broiled salmon with grilled pineapple, garlic broccolini and brown rice.

Friday – homemade pizza. And wine. Lots and lots of wine.

It’s a good thing I have upped my Dailey Method game as part of their 30 in 60 Summer challenge (30 classes in 60 days). I already have 20 logged with three weeks remaining in the challenge – yes, you read that right.

So I can enjoy all of this – and the odd dessert, of course ๐Ÿ˜‰

PS – I ALSO have another one of these banana breads in the oven as we speak. I told you it was good…

    i love these posts, glad to see one again! (though i have also been super slacking lately – but that’s what august is for, right?) that cornbread looks amazing!

      Thanks, Lindsay! And yes, I will make them more habitual once life becomes more habitual again… ๐Ÿ˜‰
