A Summer Treat: Homemade Creamsicles
My husband, like most men, usually tunes out when I start talking about my favorite Pinterest finds. But even he couldn’t resist when I came across this recipe for homemade creamsicles. Just the thought of the cool, creamy, tangy creamsicle flavors that filled the hot summer days of our youth had us both longing for the sounds of the ice cream truck outside our door. Alas, it never came, so this weekend we made them ourselves:
Ingredients
1 cup of orange juice (no pulp please)
1 cup of coconut milk (I made the mistake of using a light version from Trader Joe’s because I couldn’t find a full-fat one there – you need a full-fat one…or apparently you can use heavy cream instead, but I loved the coconut essence)
3 tablespoons of honey
1/4 tsp of orange extract (good thing I loved the recipe, or I would have a full bottle minus 1/4 tsp of orange extract laying around for a long time)
1/2 tsp of vanilla extract
Directions
Whisk everything together in a bowl
Pour into popsicle molds (if you are using popsicle sticks, allow mixture to settle for 30 mins or so before putting them in) and let freeze
Run under warm water to loosen before enjoying.
And you will enjoy, trust me.

Do you suppose I could put the mixture in an ice cream maker and eat it as ice cream? I don’t have any popsicle molds, but I do have 9/10 of a bottle of orange extract…
